Ingredients

  • 3 cups all-purpose flour, spooned and leveled
  • 3 tbsp granulated sugar
  • 3 tsp baking powder
  • 1 tsp dried thyme
  • 1 ½ tsp salt
  • ¾ tsp freshly ground black pepper
  • 1 bottle (12 oz) beer, light-colored pilsner recommended
  • ¾ cup shredded Jarlsberg, Gruyere, or Swiss cheese
  • ½ cup shredded sharp cheddar cheese
  • 2 tbsp melted butter
  • ¼–½ tsp garlic salt, to taste

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 375°F (190°C). Grease a 9×5-inch loaf pan with nonstick cooking spray.
  2. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, thyme, salt, and pepper.
  3. Add beer: Gradually stir beer into the dry ingredients using a wooden spoon, scraping the sides and bottom of the bowl until the mixture is just moistened. Stop as soon as no dry flour remains.
  4. Add cheese: Gently fold in shredded cheeses.
  5. Prepare for baking: Transfer batter to the prepared loaf pan, patting it down evenly (top will be lumpy, which is normal). Drizzle melted butter evenly over the top and sprinkle with garlic salt.
  6. Bake: Bake 40–50 minutes or until golden brown and a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.
  7. Serve: Serve warm or toasted with butter for best results.

Tips

  • Do not overmix the batter; overmixing can make the bread dense.
  • Use freshly shredded cheese for better melting and flavor.
  • Check with a toothpick to ensure the center is fully baked before removing from the oven.

Variations and Substitutions

  • Cheese options: Substitute your favorite cheeses such as mozzarella, provolone, or pepper jack.
  • Herbs and spices: Add rosemary, smoked paprika, or onion powder for extra flavor.
  • Beer alternatives: Use non-alcoholic beer or a light lager.
  • Gluten-free: Replace flour with a gluten-free all-purpose blend.

FAQs

Can I make this ahead of time?
Yes, bake ahead and store at room temperature in an airtight container for 2–3 days.

Can I freeze it?
Yes, cool completely, wrap tightly in plastic wrap, and freeze for up to 3 months. Thaw before serving.

Why is my bread dense?
Overmixing the batter or using a heavy beer can result in a denser loaf. Stir gently just until combined.

Serving

Serve slices warm with butter, alongside soups, salads, or stews. It’s also great toasted for sandwiches or as a snack.

Suggestions

  • Sprinkle extra shredded cheese on top before baking for a crisp, cheesy crust.
  • Serve with a dipping sauce, such as garlic butter or marinara.
  • Pair with hearty soups like tomato basil or chili for a comforting meal.
