Carne Asada Tacos

Make authentic Mexican Carne Asada Tacos at home with this easy recipe. Ingredients

For the Steak:

  • 1½ to 2 pounds flank or skirt steak
  • 12 small corn or flour tortillas, toasted in a dry skillet

Carne Asada Marinade:

  • ⅓ cup extra virgin olive oil
  • 3 garlic cloves
  • 1 jalapeño, seeded if desired
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ bunch fresh cilantro
  • Sea salt and freshly ground black pepper, to taste
  • Juice of 1 lime
  • Juice of 1 orange
  • ½ teaspoon sugar

Optional Garnishes:

  • Cotija or queso fresco, crumbled
  • Salsa, pico de gallo, or hot sauce
  • Avocado or guacamole
  • Diced red onion
  • Sour cream
  • Fresh cilantro leaves
  • Lime wedges

Instructions

1. Marinate the Steak

  1. In a food processor, combine all the marinade ingredients and process until smooth.
  2. Place the steak in a baking dish large enough to lay flat. Spread the marinade evenly over both sides of the steak.
  3. Cover and refrigerate for at least 2 hours, or up to 8 hours for maximum flavor.

2. Grill the Steak

  1. Preheat an outdoor grill to medium-high heat.
  2. Grill the steak for 7–10 minutes per side, aiming for an internal temperature of 135–140°F (medium-rare to medium).
  3. Transfer the steak to a cutting board and rest for 5 minutes.
  4. Slice the steak thinly (¼-inch) against the grain, then cut into pieces that fit easily in tortillas.

3. Prepare the Tortillas

  1. Toast corn or flour tortillas in a dry skillet over medium heat, about 30 seconds per side, until lightly golden.
  2. Keep warm in a tortilla warmer until ready to serve.

4. Assemble the Tacos

  1. Place sliced carne asada on toasted tortillas.
  2. Add any combination of your favorite toppings from the optional garnishes.
  3. Serve immediately with lime wedges.
