Ingredients

  • 1 large head of cabbage
  • ¾ cup cooked white rice
  • ½ lb ground beef
  • ½ lb ground pork
  • 1 large egg
  • 1 small onion, finely diced
  • 1 tablespoon fresh parsley (optional)
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper

For the sauce:

  • 1 (10 oz) can tomato soup
  • 1 (15 oz) can diced or crushed tomatoes
  • ½ teaspoon sugar

Instructions

  1. Prepare the oven and dish
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray.
  2. Soften the cabbage
Remove the core from the cabbage using a sharp knife. Place the cabbage in a microwave-safe dish with ½ cup water. Cover and microwave on high for 5 minutes. Turn it over and cook for another 10 minutes. Drain well and let it cool.
  3. Separate the leaves
Carefully peel off the cabbage leaves one at a time. Place them on a clean towel to cool and dry completely.
  4. Prepare the filling
In a large bowl, combine the cooked rice, ground beef, ground pork, diced onion, egg, parsley, salt, garlic powder, onion powder, and pepper. Mix until well combined.
  5. Make the sauce
In another bowl, mix together the tomato soup, diced or crushed tomatoes, and sugar.
  6. Prepare the leaves
Pat the cabbage leaves dry. Trim the thick center ridge with a knife to make rolling easier.
  7. Assemble the rolls
Place about 1½ to 2 tablespoons of filling onto each cabbage leaf. Roll tightly and tuck in the ends.
  8. Layer in the dish
Spread half of the tomato sauce on the bottom of the baking dish. Arrange the cabbage rolls seam-side down in rows. If stacking is needed, add sauce between layers.
  9. Add remaining sauce
Pour the rest of the sauce evenly over the rolls.
  10. Bake
Cover tightly with aluminum foil and bake for 90 minutes.
  11. Rest before serving
Let the cabbage rolls cool for about 10 minutes before serving.

Why You’ll Love This Recipe

Tips

  • Choose a large cabbage with flexible leaves for easier rolling.
  • Don’t skip trimming the thick rib—it makes rolling much easier.
  • Avoid overfilling the leaves to prevent them from opening during baking.
  • Let the rolls rest after baking to help the sauce thicken slightly.

Variations and Substitutions

  • Meat options: Use all beef, all pork, or substitute with ground chicken or turkey.
  • Rice alternatives: Try brown rice or cauliflower rice for a lighter option.
  • Vegetarian version: Replace meat with lentils, mushrooms, or a plant-based mix.
  • Sauce twist: Add garlic, paprika, or herbs to the tomato sauce for extra flavor.

FAQs

Can I make cabbage rolls ahead of time?
Yes, you can assemble them in advance and refrigerate for up to 24 hours before baking.

Can I freeze cabbage rolls?
Yes, freeze them before or after baking. Store in an airtight container for up to 3 months.

Do I have to use pork?
No, you can use only beef or substitute with another protein.

Why are my cabbage rolls tough?
They may need more cooking time or the cabbage wasn’t softened enough.

Serving
