  • 4 cups chicken broth
  • 1/4 cup Frank’s Red Hot Original Sauce
  • 1.5 pounds uncooked chicken breasts (see note)
  • 8 ounces cream cheese (I used a block of Philly, see note)
  • Salt and pepper to taste
  • Garnish (optional): crumbled blue cheese, chopped scallions

Instructions:

  1. Heat olive oil and butter in a large pot over medium-high heat. Add the chopped onion, celery, and carrots, and sauté for about 7 minutes until softened.
  2. Stir in the flour and ranch seasoning, followed by the chicken broth and Frank’s Red Hot sauce. Bring to a simmer.
  3. Add the uncooked chicken breasts to the pot (no need to cut them up). Increase the heat to high and bring the soup to a boil. Once boiling, reduce the heat and let it simmer with the lid slightly open for about 12 minutes. If the chicken isn’t fully submerged, flip it over halfway through.
  4. Remove the chicken breasts from the pot and place them on a cutting board. While the chicken rests, add the cream cheese to the pot, stirring until it melts into the soup.
