Key Ingredients for Buffalo Chicken Quesadillas
- Cooked, Shredded Chicken: The foundation of the quesadilla, shredded chicken soaks up the buffalo sauce for maximum flavor. You can use rotisserie chicken or any leftover cooked chicken to save time.
- Buffalo Sauce: The star ingredient, buffalo sauce brings the signature tangy, spicy flavor to the dish. Adjust the amount of sauce depending on your heat preference.
- Shredded Mexican Cheese Blend: A mix of cheeses like cheddar, Monterey Jack, and queso blanco melts perfectly, creating a rich, gooey filling that balances the spiciness of the buffalo sauce.
- Flour Tortillas: Large, soft tortillas hold everything together and crisp up beautifully when cooked in butter.
- Butter: Cooking the quesadillas in butter adds an extra layer of richness and helps achieve that perfectly golden, crispy exterior.
Chef’s Tips
- Pre-cook the Chicken: Make sure your chicken is cooked and shredded before you start. This will save you time and ensure the chicken absorbs the buffalo sauce fully.
- Don’t Overfill: While it’s tempting to load up on cheese and chicken, overfilling the quesadillas can make them difficult to flip and cause them to fall apart. Stick to the recommended amounts for the best results.
- Low-Medium Heat: Cook the quesadillas on low to medium heat to avoid burning the tortillas before the cheese has a chance to melt completely.
- Customize the Spice: If you like your quesadillas extra spicy, add a drizzle of hot sauce or a sprinkle of crushed red pepper flakes to the chicken mixture.
- Serve Immediately: These quesadillas are best served hot, straight from the skillet, so the cheese stays melty and the tortillas crispy.
- Dip It: Ranch or blue cheese dressing makes the perfect dip for these quesadillas. The cool, creamy dressing balances out the heat of the buffalo sauce.
