Ingredients

  • 1 ½ cups (350 ml) water, 110°F (45°C)
  • 2 tbsp (30 g) melted butter or oil
  • 4 tsp granulated sugar
  • 1 ½ tsp salt
  • 4 cups (480 g) whole wheat flour (strong wholemeal flour in the UK)
  • 1 tsp instant yeast

Instructions

  1. Layer ingredients: Add ingredients to the bread machine pan in this order: water, butter or oil, salt, sugar, flour, and yeast on top.
  2. Set the machine: Secure the bread pan in the machine, close the lid, and plug it in. Select the whole wheat or wholemeal bread setting, choose medium size, and start the cycle.
  3. Bake: The bread machine will knead, proof, and bake the dough automatically.
  4. Cool: Once the cycle ends, unplug the machine, open the lid, and carefully remove the pan with oven mitts. Let the bread cool in the pan for 10 minutes. Remove the loaf from the pan and allow it to cool completely on a wire rack. Remove the paddle if it is stuck in the loaf.

Tips

  • Ensure water is at the correct temperature to activate yeast without killing it.
  • Use fresh whole wheat flour for best rise and texture.
  • Let bread cool completely before slicing to prevent a gummy texture.
  • Lightly grease the pan to make removing the loaf easier.

Variations and Substitutions

  • Flour options: Mix in spelt or oat flour for a different flavor.
  • Add-ins: Include seeds, nuts, or dried fruits for texture and taste.
  • Oil alternatives: Swap butter with olive oil or coconut oil for a different flavor.
  • Sweetener: Use honey, maple syrup, or brown sugar instead of granulated sugar.

FAQs

Can I double the recipe?
Check your bread machine’s maximum capacity. Doubling may require multiple batches.

Can I use active dry yeast instead of instant yeast?
Yes, but dissolve it in water first and let it proof for 5–10 minutes before adding other ingredients.

How do I store the bread?
Keep it at room temperature in a bread box or airtight container for up to 4 days, or freeze for longer storage.

Serving

Slice and serve warm with butter, jam, or as a base for sandwiches. Pairs well with soups, stews, or salads.
