Ingredients

  • 1 ¼ cups (350 ml) milk (2%, warmed to 110°F / 45°C)
  • 2 tablespoons (30 g) melted butter
  • 2 tablespoons honey or sugar
  • 1 teaspoon salt
  • 3 cups (360 g) whole wheat flour (strong wholemeal flour works in the UK)
  • 1 cup (100 g) old fashioned rolled oats
  • 2 ½ teaspoons instant yeast
  • Optional: 1 egg for egg wash

Instructions

1. Add Ingredients to Bread Machine

  1. Layer ingredients in the bread machine pan in the following order:
    Milk → Butter → Salt → Honey → Flour → Oats → Yeast.
  2. Ensure the pan is securely placed in the machine, close the lid, and plug in.

2. Select Settings

  1. Choose the basic bread setting, medium size, and start the machine.
  2. The machine will knead, proof, and bake the dough automatically.

3. Optional Egg Wash

  1. If using an egg wash, brush it on the bread toward the end of the rising cycle.
  2. Sprinkle extra oats on top if desired. Close the lid and let the machine continue to bake.

4. Remove and Cool

  1. When the cycle finishes, unplug the machine and remove the pan carefully using oven mitts.
  2. Let the bread cool for 10 minutes in the pan, then gently remove it.
  3. Carefully remove the kneading paddle if it is stuck in the loaf. Allow the bread to cool completely before slicing.

Tips

  • Ensure the milk is warm, not hot, to activate yeast without killing it.
  • Layer ingredients exactly in order for best results.
  • Use a lightly greased pan to prevent sticking.
  • Let the bread cool completely before slicing to maintain structure.
  • For a crustier loaf, select a crust setting if your machine has one.

Variations and Substitutions

  • Flour options: Substitute half of the whole wheat flour with all-purpose flour for a lighter loaf.
  • Sweeteners: Use maple syrup, agave, or brown sugar instead of honey.
  • Add-ins: Fold in nuts, seeds, dried fruit, or cinnamon for extra flavor.
  • Egg wash: Omit for a softer crust or use milk for a light glaze.

FAQs

Can I use quick oats instead of old-fashioned oats?
Yes, but the texture will be slightly softer and less chewy.

Can this bread be made without a bread machine?
Yes, knead by hand or with a stand mixer and bake in a greased loaf pan at 350°F (175°C) for 35–40 minutes.

How long will it stay fresh?
Store in an airtight container at room temperature for 3–4 days, or freeze for up to 1 month.

Can I double the recipe?
Yes, but ensure your bread machine pan can accommodate a larger loaf.
