Bourbon Glazed Carrots

Sweet and tender bourbon glazed carrots with a rich brown sugar and butter glaze. This easy carrot side dish is perfect for holiday dinners, weeknight meals, or family-friendly vegetables. Ingredients

  • 11–12 carrots (2–2½ pounds), peeled and sliced diagonally into 1½-inch pieces
  • 7 tablespoons butter, divided
  • ½ cup bourbon whiskey (such as Jim Beam)
  • ⅓ cup light brown sugar, packed
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh chives, for garnish

Instructions

Brown the Carrots

  1. Melt 2 tablespoons of butter in a large skillet or sauté pan over high heat (cast iron is ideal).
  2. Add the carrots before the butter begins to brown. Cook for 3–4 minutes, stirring occasionally, until the carrots are lightly browned.
  3. Transfer the browned carrots to a dish and set aside.

Make the Bourbon Glaze

  1. Reduce heat to medium. Pour the bourbon into the pan and stir to deglaze, scraping up any browned bits. Allow it to reduce until almost gone.
  2. Add the remaining 5 tablespoons butter and the brown sugar. Stir until combined.

Combine and Cook

  1. Return the browned carrots to the pan and bring the mixture to a simmer. Reduce heat to low, cover, and cook for 3–5 minutes, or until carrots start to become fork-tender.
  2. Remove the lid, season with salt and pepper, and continue cooking for another 3–4 minutes, stirring occasionally, until the carrots are tender and the glaze has thickened.

Serve

  1. Transfer to a serving dish and garnish with chopped fresh chives.
