Ingredients

For the Biscuit:

  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon sugar
  • ¼ teaspoon salt
  • 1 ½ tablespoons cold butter, cut into small pieces
  • ¼ cup milk

For the Sausage Gravy:

  • 2 ounces ground pork sausage
  • ½ tablespoon all-purpose flour
  • ½ cup milk
  • ⅛ teaspoon creole seasoning (homemade or pre-made)

Instructions

Biscuit Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a Silpat.
  2. In a medium bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Add the cold butter pieces to the flour mixture. Use your fingers or a pastry blender to work the butter into the flour until it resembles coarse sand.
  4. Pour in the milk and gently stir until the dough just comes together.
  5. Using a large spoon, drop portions of the dough onto the prepared baking sheet.
  6. Bake for 10–12 minutes, until the biscuits are golden brown.

Sausage Gravy Instructions

  1. Heat a 10-inch skillet over medium-high heat. Test by adding a few drops of water; if they evaporate immediately, the skillet is ready.
  2. Crumble the sausage into the skillet and break it into smaller pieces with a spatula. Cook until browned and fully cooked.
  3. Sprinkle the flour over the sausage and stir for 1 minute.
  4. Gradually stir in the milk, cooking constantly until the gravy thickens and becomes bubbly, about 5 minutes.
  5. Add creole seasoning and stir for another 30 seconds. If the gravy is too thick, add an extra tablespoon of milk to reach desired consistency.

Assembling the Biscuit with Gravy

  1. Slice the biscuit in half and place it on a plate or in a bowl.
  2. Spoon the sausage gravy over one half of the biscuit, then top with the other half. Serve warm.

Tips

  • Use cold butter for the biscuit to keep it flaky.
  • Stir the gravy constantly to prevent lumps.
  • Adjust the creole seasoning to taste for a milder or spicier flavor.

Variations and Substitutions

  • Biscuits: Use whole wheat flour or a pre-made biscuit for convenience.
  • Sausage: Substitute turkey sausage, chicken sausage, or plant-based sausage.
  • Milk: Whole milk gives a creamy texture, but 2% or plant-based milk works as well.

FAQs

Q: Can I make the biscuits ahead of time?
A: Yes, bake the biscuits in advance and reheat them before adding the gravy.

Q: Can I double this recipe?
A: Yes, simply double the ingredients and use a larger skillet for the gravy.

Q: What if my gravy is too thin?
A: Continue cooking for a few more minutes or add a small amount of flour mixed with cold milk to thicken.

Serving

Serve the biscuit and gravy immediately while warm. A side of fresh fruit, a small salad, or roasted vegetables can round out the meal.

Suggestions

  • Top with a fried or poached egg for extra protein.
  • Sprinkle fresh parsley or chives over the gravy for added flavor.
  • Pair with coffee or tea for a comforting breakfast experience.
