Ingredients

  • 3 pounds boneless top sirloin
  • 1½ teaspoons salt
  • Freshly ground black pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1 small onion, diced (about 1 cup)
  • 1 tablespoon minced garlic
  • ½ cup full-bodied red wine
  • 2 cups low-sodium beef broth
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 12 medium cremini mushrooms, sliced (about 2 cups)
  • ⅓ cup cream cheese or Neufchâtel, softened
  • ⅓ cup sour cream (light or regular)
  • 2 tablespoons cornstarch
  • Additional salt and freshly ground pepper, to taste
  • 2 tablespoons chopped fresh chives
  • Long grain white rice or egg noodles, prepared according to package directions

Instructions

1. Prepare the Beef

  • Trim any excess fat from the sirloin.
  • Slice the meat into ½-inch thick strips, then cut each strip in half lengthwise to about 2 inches long.

2. Brown the Beef

  • In a large skillet over medium-high heat, melt the butter with vegetable oil.
  • Brown the beef strips in batches, seasoning generously with salt and pepper.
  • Remove the cooked beef to a plate and repeat with remaining meat.

3. Build the Sauce

  • Add diced onions and garlic to the skillet with the beef drippings and cook for 2 minutes.
  • Pour in the red wine and cook for 1–2 minutes.
  • Stir in beef broth, Dijon mustard, and Worcestershire sauce, then return the beef to the pan.
  • Bring to a low boil, reduce heat to low, cover, and simmer 45–60 minutes until beef is fork-tender.

4. Thicken the Sauce

  • Remove about ¼ cup of the cooking liquid to a small bowl.
  • Mix in cornstarch until dissolved and stir it back into the stroganoff. Cook 1–2 minutes until slightly thickened.

5. Add Mushrooms and Cream

  • Stir in the sliced mushrooms and cook about 10 minutes, stirring occasionally.
  • Add cream cheese and sour cream, stir until fully incorporated and creamy.
  • Taste and adjust seasoning with salt and pepper.

6. Serve

  • Sprinkle with chopped fresh chives and serve over cooked rice or egg noodles.
