BBQ Braised Short Ribs

BBQ Braised Short Ribs cooked low and slow in a rich tomato and BBQ sauce with carrots, onions, and garlic. Ingredients

  • 2 tablespoons vegetable oil
  • 3 to 3½ pounds beef short ribs, bone-in or boneless, cut into 3–4 inch pieces
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 large onion, sliced into thick rings
  • 5 carrots, peeled and cut into chunks
  • 4 garlic cloves, coarsely chopped
  • 16 ounces canned tomato sauce
  • 1 cup BBQ sauce
  • 1 cup low-sodium beef broth

Instructions

1. Preheat and Brown the Ribs

  1. Preheat the oven to 325°F (165°C).
  2. Heat the vegetable oil in a large, heavy, oven-safe pot or Dutch oven over medium heat.
  3. Brown the short ribs on all sides, about 5 minutes per batch. Season with salt and pepper as they sear.
  4. Transfer the ribs to paper towels to drain excess oil.

2. Cook the Vegetables

  1. In the same pot, add the onion rings and carrot chunks. Cook and stir until the onions become translucent and start to brown, about 8 minutes.
  2. Add the garlic and cook for 1 minute until fragrant.

3. Combine Sauce and Ribs

  1. Stir in the tomato sauce, BBQ sauce, and beef broth. Bring the mixture to a boil and simmer for 1 minute to combine flavors.
  2. Return the browned ribs to the pot, coating them with the sauce.

4. Braise in the Oven

  1. Cover the pot and bake in the preheated oven for about 2½ hours, until the meat is very tender.
  2. Turn the ribs occasionally during cooking for even flavor.
  3. Adjust seasoning with salt and black pepper if needed before serving.
