Bangers and Mash with Onion Gravy

This classic British comfort dish features juicy sausages served over creamy mashed potatoes, topped with rich onion gravy. Perfect for cozy dinners, this hearty meal is a timeless favorite with bold flavors and satisfying textures.

Ingredients

For the Sausages and Gravy:

  • 1 tablespoon olive oil
  • 8 sausages (pork, beef, chicken, or plant-based)
  • 2 to 4 tablespoons butter
  • 2 medium white or yellow onions, thinly sliced
  • ¼ cup all-purpose flour
  • ⅔ cup dry white wine
  • 2 cups beef stock
  • 2 teaspoons garlic powder
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Fine sea salt and freshly ground black pepper, to taste
  • Fresh parsley, finely chopped, for garnish

For Serving:

  • Mashed potatoes
  • Steamed sweet peas (optional)

Instructions

1. Prepare Mashed Potatoes:

Make a batch of your favorite mashed potatoes and keep warm. (This can be done ahead.)

2. Cook the Sausages:

Heat olive oil in a large sauté pan over medium-high heat. Arrange the sausages in a single layer and cook, turning occasionally, until deeply browned on all sides and fully cooked through. Cooking time varies depending on the type and thickness of sausages. Transfer to a plate and set aside.

3. Start the Gravy:

Keep about 2 tablespoons of sausage drippings in the pan. (If there isn’t enough, supplement with extra butter.) Add 2 tablespoons butter and sliced onions. Sauté for about 4 minutes, until the onions begin to soften and turn golden. Stir in the flour and cook for 1 minute, stirring frequently, to form a roux.

4. Simmer the Gravy:

Deglaze the pan with the white wine, scraping up any browned bits from the bottom. Slowly stir in the beef stock. Add garlic powder, balsamic vinegar, and Dijon mustard. Bring to a simmer and cook for 1–2 minutes, or until the gravy thickens. Adjust thickness with more stock if needed. Taste and season with salt, pepper, or additional balsamic or mustard as desired.

5. Serve:

Spoon mashed potatoes onto each plate, top with sausages, and pour over the onion gravy. Garnish with chopped parsley and serve with peas on the side, if desired. Enjoy warm.
