Balsamic Herb Marinade:

  • ยผ cup olive oil
  • ยผ cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon minced garlic
  • 1 teaspoon dried crushed rosemary
  • ยฝ teaspoon dried oregano

Prepare the Marinade

  1. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, garlic, rosemary, oregano, salt, and pepper until well combined.

Marinate the Chicken

  1. Place the chicken pieces in a gallon-size plastic storage bag. Pour in the marinade, seal the bag, and turn it a few times to evenly coat the chicken.
  2. Refrigerate for at least 1โ€“2 hours, but no more than 8 hours for best flavor.

Grilling Instructions

  1. Preheat your outdoor grill (charcoal or gas) to medium heat.
  2. Remove chicken from the marinade (discard the remaining marinade).
  3. Grill chicken for 4โ€“6 minutes per side, or until an instant-read thermometer inserted into the thickest part reads 165ยฐF (74ยฐC), or until no pink remains when sliced.

Stovetop Instructions

  1. Heat a small amount of olive oil in a large skillet or grill pan over medium heat.
  2. Cook chicken for several minutes on each side until fully cooked (internal temperature of 165ยฐF).
  3. Discard any leftover marinade.

  1. Let the chicken rest for 5โ€“10 minutes before serving.
