Ingredients

  • 12 large hard-boiled eggs, peeled
  • ⅓ cup mayonnaise (light or regular)
  • 1 tablespoon creamed horseradish
  • 1 tablespoon sweet pickle relish
  • 2 teaspoons yellow mustard
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 6 slices bacon, cooked until crispy, crumbled and divided
  • Smoked paprika, for garnish

Instructions

  1. Prepare the eggs: Using a sharp knife, cut the hard-boiled eggs in half lengthwise. Carefully remove the yolks and place them in a medium mixing bowl.
  2. Mash the yolks: Use a fork to mash the yolks until they are fine and crumbly.
  3. Make the filling: Add the mayonnaise, creamed horseradish, sweet pickle relish, yellow mustard, salt, and pepper. Mix until smooth and well combined.
  4. Add bacon: Fold in about three-quarters of the crumbled bacon, reserving the rest for topping.
  5. Fill the egg whites: Transfer the yolk mixture to a piping bag or a zip-top plastic bag. Snip off one corner and pipe the filling evenly into the egg white halves.
