Ingredients

For the Steak:

  • 2 to 2 ½ pounds top round steak (London Broil), 1 ½–2 inches thick

  • ½ teaspoon freshly ground black pepper

  • ¼ cup balsamic vinegar
  • ¼ cup extra virgin olive oil
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon Worcestershire sauce
  • Juice of ½ lemon
  • 1 tablespoon Dijon mustard
  • 2 teaspoons minced garlic
  • 1 teaspoon dried crushed rosemary
  • 1 teaspoon dried thyme

Optional Blue Cheese Butter:

  • ¼ cup butter, softened
  • 2 tablespoons crumbled blue cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh minced herbs (parsley, thyme, or basil), optional

Optional Blue Cheese Horseradish Sauce:

  • ¾ cup sour cream
  • ¼ cup blue cheese crumbles
  • 2 tablespoons mayonnaise (olive oil mayo works well)
  • 2 tablespoons creamed horseradish
  • 2 tablespoons chopped fresh chives
  • ¼ teaspoon salt
  • Freshly ground black pepper, to taste

Instructions

  1. Tenderize the steak: Use the textured side of a meat mallet to pound both sides of the steak once or twice, leaving light marks.
  2. Season the meat: Place the steak in a baking dish. Sprinkle with salt and black pepper, pressing it gently into the surface.
  3. Marinate: In a small bowl, combine all marinade ingredients. Pour over the steak, flip to coat both sides, cover with plastic wrap, and refrigerate for at least 8 hours or overnight. Flip once during marinating if possible.
  4. Bring to room temperature: Remove steak from the fridge and let it sit, covered, at room temperature for 30–45 minutes before cooking.
  5. Preheat air fryer: Set the air fryer to 400°F (200°C) for 5 minutes.
  6. Cook the steak: Place the steak carefully in the air fryer basket. Cook at 400°F for 8 minutes, flip, then cook an additional 6–10 minutes depending on thickness and starting temperature. The internal temperature should reach 130°F for medium-rare.
  7. Rest and slice: Transfer the steak to a cutting board and let it rest for 10 minutes. Slice against the grain into ½-inch thick pieces.
  8. Optional toppings: Top with Blue Cheese Butter or serve with Blue Cheese Horseradish Sauce on the side.

Combine butter, blue cheese, salt, pepper, and optional fresh herbs in a small bowl. Refrigerate until ready to use and add to warm steak before serving.
