Air Fryer Fish Fingers

Crispy on the outside, tender on the inside these homemade air fryer fish fingers are a healthier and delicious alternative to deep-fried fish sticks. Perfect for kids and adults alike, they’re quick to make and pair wonderfully with tartar sauce and lemon wedges.

Ingredients

  • 1 pound (450 g) fish fillets* (patted dry and lightly salted)
  • ½ cup all-purpose flour
  • 1 teaspoon salt, divided
  • ½ teaspoon ground black pepper, divided
  • 2 large eggs
  • 1 cup (50 g) dried breadcrumbs (use gluten-free breadcrumbs if needed)

For Serving:

  • Tartar sauce
  • Lemon wedges

*If using frozen fish, thaw completely before preparing.


Instructions

  1. Prepare the Fish
    Pat the fish fillets dry and season with salt. Let them rest for 20–30 minutes (up to 1 hour). This helps draw out excess moisture, firms the fish, and enhances flavor.
  2. Season the Coatings
    Mix flour with half the salt and pepper. In a separate bowl, beat the eggs. Season breadcrumbs with the remaining salt, pepper, and optional spices such as garlic powder, onion powder, smoked paprika, chili powder, or fresh dill.
  3. Bread the Fish
    Dredge each fish strip in the seasoned flour, shaking off excess. Dip into the eggs, then coat evenly with breadcrumbs.
  4. Air Fry
    Arrange the breaded fish fingers in the air fryer basket in a single layer without overlapping. Spray lightly with oil for extra crispiness. Air fry at 400°F (200°C) for 10 minutes, flip, and cook for another 5 minutes until golden brown and crispy.
  5. Serve
    Remove from the air fryer and serve hot with tartar sauce, lemon wedges, or your favorite dipping sauce.
